Balanced recipe for a summer salad
For 4 people, this recipe contains:
400 grams of green beans
1 shallot
chives
In addition, what you will need:
2 tablespoons of mustard
1 tablespoon of vinegar
4 tbsp. olive oil
salt, pepper (optional: curry powder)
Preparation:
- Remove the ends of the beans, wash them, then plunge them into a pot of boiling salted water and cook them for 8 to 10 minutes.
- Check for doneness (beans should be slightly crisp), cool under cold water to keep their green color, drain and set aside.
- In a bowl, mix the mustard with 1 tbsp of vinegar, then add 4 tbsp of olive oil, the chopped shallot and the chopped chives. Season with salt and pepper.
- Put the cooled beans in a salad bowl, season with the vinaigrette, mix well and refrigerate.
- Serve chilled.
